Roasted Maitake (Hen of the Woods) Mushrooms

If you have yet to discover the bliss that is roasted hen of the woods mushrooms, you are in for a treat!

Maitake, or hen of the woods mushrooms, are my absolute favorite mushroom! Although light and delicate in texture, these mushrooms take on a wonderful nutty taste when roasted that makes them feel far more substantial.

You can certainly prepare maitake mushrooms in a sauté pan with additional herbs and garlic, but I prefer to simply roast them seasoned with salt and pepper. I find that this preparation brings out the bold flavors I enjoy most.

Enjoy this versatile mushroom as an appetizer or served alongside steak as an entrée.

 

Recipe

Roasted Maitake Mushrooms

Yields 2 - 4 Servings

Ingredients

  • 1 - 2 (8) ounce packages maitake mushrooms

  • 1 - 2 tablespoons olive oil or olive oil spray

  • Salt and freshly ground black pepper

Method 

Preheat oven to 425 degrees F.

Toss mushrooms in olive oil and season with salt and pepper. Arrange on a cook sheet in one even layer.

Transfer to oven and bake for approximately 10 - 15 minutes, or until tender with crisp golden brown edges.

Remove from oven, transfer to a serving plate and enjoy immediately.
